If there is one dish people associate with Rajasthan, it is dal baati churma. It is hearty, rustic and made for sharing, and it is the perfect meal after a morning on the hills.

What is dal baati churma?

  • Dal: usually a mix of lentils, often called panchmel dal, cooked with spices and a final tempering of ghee.
  • Baati: hard, round wheat dough balls baked until crisp outside and soft inside. They are broken open and soaked in ghee.
  • Churma: crushed baati mixed with ghee and jaggery or sugar, served as a sweet, crumbly side.

How to eat it

Break the baati with your fingers, pour dal over it and add a spoon of ghee. Eat it with garlic chutney if you like it spicy, and finish with a little churma. Use your right hand and take your time, because the dish is rich and filling.

What else is on a Rajasthani thali?

  • Gatte ki sabzi: gram flour dumplings in a spiced yogurt gravy.
  • Ker sangri: a desert dish of tangy dried berries and beans, cooked with spices.
  • Kadhi: a tangy yogurt and gram flour curry.
  • Bajra roti: millet flatbread, served with ghee and garlic chutney.
  • Papad, salad and pickles: crisp, fresh and sharp accents.
  • A sweet: often churma, moong dal halwa or malpua.

Why it suits Jawai

Rajasthani food grew up in a dry region, using dried vegetables, legumes, millets and plenty of ghee and yogurt. It travels and keeps well, and it gives you the energy for long drives and walks.

Is it spicy?

It can be, but the heat is usually in the chutneys and pickles. You can ask for milder food, and we are happy to adjust for children and older guests.
