A Rajasthani breakfast is hearty and often fried, built to last through a day of farm or travel work.
Savoury favourites
- Pyaaz kachori: crisp pastry filled with spiced onion.
- Mirchi vada: a chilli stuffed with spiced potato and fried in batter.
- Poha: flattened rice with peanuts, a lighter option.
- Dahi vada and samosa are also common.
With a sweet note
Jalebi, hot and syrupy, often goes with milk or rabdi. A glass of lassi or a cup of chai completes the meal.
For early safaris
Drives start around 6:00 AM, so ask for a light breakfast, chai and a packed snack beforehand. Eat the heavier dishes after you return.
What goes with it
Most breakfasts come with sweet and sour tamarind chutney, green chilli chutney and sometimes a little curd. Pair a crisp kachori with a cup of tea, and balance a spicy mirchi vada with lassi. If you have a sensitive stomach, start with poha or a plain paratha and add the fried items slowly.
Street stalls are busiest early; choose places that are busy and cook everything fresh, and ask for hot food only.
